Low-budget tips: This is a great summer dish because it can be done with your home-grown green beans. I prefer to smother the bean ends and keep the whole beans. If fresh beans market are not available, frozen green beans also work well. Some stores also have whole frozen green beans.
Select the beans, when mature, but still thin. The beans hard when their seeds too thickly. The beans until they are soft. Make sure they are notmore crisp. For variety you can also use fresh yellow beans. I prefer the color contrast of green beans and white potatoes.
Lean and healthy tips: This dish can be made with lard instead of olive oil. This will be a stronger taste of bacon. I replace the bacon with olive oil to keep the calories and fat to a minimum. White flour will also work in place of cornstarch. This is the sauce a milky appearance. The corn starch will be aclear or translucent appearance. I find that many are willing bean salad too sour. You can add more or less sugar in the sauce to your personal taste. Are (children, as is better with more sugar.)
